Weekly Meal Prep+ Recipe

Here are some snapshots from this past week’s delivery. Including the menu I sent out.

And a recipe! This is a Cucumber Miso Crunch Salad: The perfect side salad for any summer grilled meat or fish. It would also go well with. my Soy Glazed Salmon recipe.

Cucumber Miso Crunch Salad

Serves 4:

Ingredients:

For the Salad:

  • 4 English Seedless Cucumbers, Chopped
  • 4 Radishes, thinly sliced
  • 4 Scallions, chopped
  • 1 cup Edamame Beans

For the Miso Tahini Dressing:

  • 1.5 tbsp white miso paste
  • ¼ cup tahini 
  • 1 tsp freshly grated ginger
  • ½ tbsp rice vinegar
  • Juice of 1 lime
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions:

  1. Mix all of the dressing ingredients together. Add about ¼ cup cold water to make the smooth consistency that you like. Season to taste with salt and pepper.
  2. Toss Salad with dressing and season to taste. Garnish with option chili crisp, sesame seeds, and more chopped scallions or cilantro. Serve immediately.
