Healthier Buffalo Chicken Salad-Meal Prep!

I shared this recipe on my instagram story but figured I would post it on my site as well. There’s a local grocery store in Rhode Island, Dave’s, that makes a lot of variations of chicken salad. When I first tried their buffalo chicken salad I was HOOKED. My favorite part about it is they add banana peppers and it just adds such a delicious tang and spice. I added a healthier version to my clients menu this week and got orders from all families!

I was very happy with how my healthier version turned out. I subbed plain Greek yogurt for extra mayo and I used a yogurt blue cheese dressing. If you aren’t a blue cheese fan feel free to swap out for ranch. If you are a blue cheese fan, adding some blue cheese crumbles is a great addition.

I bet you could also do all Greek yogurt in replacement of mayo to make it extra healthy, but I like the texture mayo gives. The key is to shred the chicken nice and fine.

I like to buy bone in, skin on chicken breasts and roast them for the chicken salad. I roast them with a bit of salt and olive oil at 400 degrees for about 45 minutes. Let cool and shred all the meat off.
