Simple Citrus Avocado Salad

Happy Wednesday!

Is anyone else anxious for this week to be over? Because same. I just want to be home already celebrating Christmas! Very soon!

Anyways, this salad is one of my favorites to serve around the holidays because it is a. simple, b. fresh and healthy, c. delicious, and d. makes for a beautiful presentation. And the extra bonus is that it could not be easier!

Simple Citrus Avocado Salad

This salad could not be easier or more refreshing!

The hardest/most time consuming part of this is segmenting the citrus. Basically you just cut a small end off of each side of the citrus, then use your knife to follow the pith down until all the skin is removed. Then you take your knife and in between each area of pith you cut a sliver so that a segment pops out. If none of that made sense, here is a tutorial to watch.

You can use any type of citrus here. I think a blood orange would be a really beautiful addition!

I like the put this salad on a plate. So layer your greens (or you can totally skip the lettuce here and just do the citrus and avocado)

Then arrange the citrus, avocado, red onion, and pomegranate seeds on top. If you wanted to make this a bit more fancy, some chopped pistachios or toasted pine nuts would be a nice addition!

The dressing is just juiced citrus (just squeeze the juice out from the orange/grapefruit pith that you segmented from, you will have extra! makes for a delicious vitamin C boost!) olive oil, honey, salt and pepper.

This is one of those dishes that will impress guests for its beautiful presentation!

Simple Citrus Avocado Salad

Serves 4

Ingredients:

  • 2 grapefruits, segmented 
  • 3 oranges, segmented
  • 1-2 avocados, sliced 
  • ¼ cup pomegranate seeds
  • ¼ red onion, thinly sliced 
  • 2 tbsp citrus juice (just squeeze out the juice from the segmented orange/grapefruit)
  • 3 tbsp olive oil
  • ½ tbsp honey
  • Salt and pepper 
  • -bed of mixed greens, butter lettuce, or little gem 
  1. For the dressing, whisk together citrus juice, olive oil, honey, and season to taste with salt and pepper.
  2. Arrange the greens on a platter and then arrange the citrus segments, avocado, pomegranate seeds, and red onion on top. Drizzle with dressing and serve immediately.

So delicious, fresh, and seasonal!
