Sweet Potato Nachos + Other Superbowl Ideas

So I started to get into making food tik tok videos since my dancing one’s aren’t going so well..

It really is such a crazy app. So many different creators and different types of content to watch. The dog, dancing, and food videos are all my favorite. And clearly I spend way too much time watching tik tok videos…

Moving on! My most recent video was these nachos!

Sweet Potato Nachos

I use to make these a lot in college for a quick and delicious dinner option. I also thought they could be a fun, slightly healthier alternative, to make for Superbowl Sunday. Not going to lie..I will not be watching this year lol But I’m usually all for a football party, because I’m VERY into football party food. *Dreams of pigs in a blanket*

Not so much the actual football..

This isn’t so much an exact recipe as it is a method. First it starts with the sweet potatoes. I used 3 small sweet potatoes and slice them into about 1/8 inch slices. Thin is key to get a crispy chip!

Then I toss the slices in olive oil, salt, pepper, and smoked paprika. Roast at 425 for 25-30 minutes, until they are nice and crispy. Toss half way through! Or every 10 minutes.

These are delicious as is to prep for the week and use to top on salads, dip in hummus, etc.

Now for the toppings! The fun part. You can really get creative and go crazy, below are some ideas:

  • Black beans
  • Pinto Beans
  • Fajita Veg (just bell pepper and red onion cooked with some taco seasoning)
  • Shredded Chicken 
  • Pulled Pork 
  • Cheese (major key)
  • Salsa
  • Sour Cream
  • Pickled Jalapenos
  • Cilantro
  • Scallions 
  • Avocado/Guac

I topped mine with fajita veg, black beans, and lots of pepperjack cheese.

Set under the broiler and voila! Then I top with all the cold toppings

I chose tomatoes, avocado, cilantro, scallions, and pickled jalapenos

SO GOOD. The possibilities are endless. Garnished with some lime wedges for some added tang.

These will definitely be a crowd pleaser. Or in covid terms, a small crowd pleaser hah
